Traditional Calamondin Marmalade
Wash the calamondins and thinly slice 4 cups of the fruit . Remove seeds and place in a blender and chop. Measure the chopped fruit and put in a saucepan, for each cup of fruit add 3 cups of water. Bring to the boil and keep boiling for 15 minutes. Measure mixture again and for each cup add a cup of sugar. Reduce to medium heat and stir to thicken. Once thickened, remove from the heat and skim. Pour into sterilized jars, seal and process for 10 minutes in boiling water baths. Store in a cool dark cupboard.
Calamondin Cordial 32oz mixture
2,5 cups vodka
3 cups sugar
Wash the calamondins, cut in half lenghtways and remove the seeds. Pour the vodka and sugar into a large jar with a tight lid then shake or stir thoroughly to dissolve the sugar. Add the calamondins and cover tightly. Set aside overnight and then turn the jar upside down each day for 30 days. On day 30, strain the liquid through a cloth and store in a separate bottle ready to drink.
